2 young Food Bloggers from West Liguria region (Italy) propose the following Mediterranean Diet Menu:

1) Aubergine, Tomato And Mozzarella Pie

2) Slice Of Swordfish Baked In A Crust

3) Yogurt and grapes jars

AUBERGINE, TOMATO AND MOZZARELLA PIE – INGREDIENTS (for 4 servings): 1 round aubergine, 3 mozzarella cheeses, 3 “Cuore di Bue” tomatoes, basil, extra-virgin olive oil, salt

Preparation: Cut the tomatoes and mozzarella cheese into slices. Sprinkle the slices with a little salt to draw out the liquid and place them where it can drain away. Slice the aubergine thinly and sautée the slices in a pan.

Make up the pie on a lined baking tray, alternating one layer of aubergine, one of tomato and one of mozzarella. End with another slice of aubergine. Bake au gratin for 10 minutes at 180°C, which is just enough time to melt the mozzarella. Plate, then decorate with a sprig of fresh basil and drizzle with oil.
