TATLI RAFIK Mediterranean menu -2ND RECIPE: Felflia de calamars ou de seiches

INGREDIENTS:

�     600 gr de calamars ou de seiches cuites�     250 gr poivrons

�     2 gousses d’ail

�     1 oignon

�     Vert d’oignon

�     Anchois

 
�     M’hammas cuit et égoutté�     Curcuma

�     Cumin

�     Sel et poivre

�     Harissa sèche

�     Huile d’olive

 

Couper les oignons en cube, les poivrons en rondelles, écraser l’ail, couper le vert d’oignons en rondelles assez large.

Chauffer l’huile dans une poêle. Jeter l’ail, les anchois et les laisser fondre, ajouter dessus les oignons et les glacer.

TATLI RAFIK Mediterranean menu -1st RECIPE: Salade Méchouia

INGREDIENTS:

2kg de poivrons
500g de tomates
4 œufs durs
3 gousses d’ail hachées
1 boite de thon à l’huile
50 g d’olives noires ou vertes
½ cc de sel
1 cc de carvi
5 cl d’huile d’olives

 

Griller les poivrons et les tomates sur le charbon de bois en tournant jusqu’à ce que leurs peau soient cloquées, puis les mettre dans un sachet en plastique.
Peler et épépiner les poivrons et les tomates. Laisser les tomates s’égoutter.
Mettre les poivrons et les tomates dans un mortier et les écraser , ajouter l’ail haché.
Récupérer le mélange poivrons et tomates, l’assaisonner de sel, lui ajouter le carvi, et l’arroser d’huile d’olive. Bien mélanger.

YOGURT AND GRAPE JARS – ingredients (for 4 servings):

500 g grapes, 500 g plain whole-milk yogurt, 400 g sugar, 200 ml water

Preparation: Wash the grapes and remove their seeds, then heat them in a saucepan with the sugar and water until they have caramelised properly. Process with a hand-held liquidizer so as to create a thick, smooth sauce. Serve in glass jars, alternating layers of yogurt and sauce. Serve chilled.
