Starter: Aubergine and spelt balls on a bed of salad

Main course: Salmon fillets in a crust of Tropea onions caramelised with beer

Dessert:   Three-flour apple and almond pie

STARTETR – AUBERGINE AND SPELT BALLS ON A BED OF SALAD

THIS RECIPE IS BASED ON A TYPICAL NEAPOLITAN DISH, INTERPRETED HERE WITH SPELT, A UNIQUE

CEREAL WITH MANY PROPERTIES.

INGREDIENTS FOR TWO SERVINGS: 2 LONG AUBERGINES, 1 EGG, 1 SPOONFUL PARMESAN CHEESE, 1 SPOONFUL PARSLEY, 50 g SPELT, 2 SPOONFULS CORNFLOUR, 1 SPRIG SALAD FOR DECORATION, 1 PINCH PEPPER.

THE AUBERGINES AND SPELT ARE BOILED, WHILE THE BALLS ARE FINISHED IN THE OVEN WITH THE ADDITION OF SOME OIL.
