Appetizer: Spicy small tarts of cheese with olive oil and wine.
Main plate: Mediterranean turkey roll with chickpeas and tahini sauce.
Dessert: Baklava of eggplant with nuts, dried fruits and thyme honey.
Spicy small tarts of cheese with olive oil and wine – INGREDIENTS
For the tart dough: 400 gr. wholemeal flour, 100g. oatmeal, 150g. extra virgin olive oil, 150g. dry wine, 2 teaspoons lemon juice, 50g. grated graviera cheese Crete, 1 teaspoon sweet paprika, 1 clove of garlic minced, 1/2 teaspoon baking soda, 2 teaspoons baking powder, 1 teaspoon honey, 1/2 teaspoon sea salt.
For the spicy cream cheese: 150g. anthotyro, 100g. feta, 100g. yoghurt 2% fat, 1 clove of garlic, 2 tablespoons of vinegar, 15g. olive oil, 1 pinch of cayenne pepper, 1 tablespoon Chopped sweet red pepper, 1 teaspoon salt, some cherry tomatoes and fresh mint leaves.
Prepare the dough: In a large bowl, we add the wine and lemon juice,add soda and mix to dissolve. Add olive oil, paprika, garlic, salt and honey and mix well.Throw inside the cheese andmix well. In another bowl mix well the flour with the oats and baking powder. Add in your blend and knead until the dough is firm. With a rolling pinopen leaf of height 0,5 cm. With a round die cut the bases for baking of tarts in the same size. Bake in preheated oven at 180 degrees Celsius for 15 to 20 minutes, depending on the oven. Take them out and let them cool on a rack. Make the spicy cream cheese: Whip together all the ingredientsuntil they become creamy. Leave the cream in the refrigerator to shakeand when we are ready to enjoy, fillthe tarts with cream,add tomatoes and fresh mint leavesto give freshness and flavor.
