THE WINNER RAFFAELLA FENOGLIO RECIPE 3: COCOANUT AND PEAR BISCUITS

COCOANUT AND PEAR BISCUITS

– INGREDIENTS:

For 12 biscuits with a diameter of 8 cm each = 4 complete desserts:

130 g grated cocoanut

50 g chickpea flour

20 ml extra-virgin olive oil, not very strong-tasting

30 g cocoanut sugar

Unrefined coconut sugar

400 ml water

2 tablespoonfuls Amaretto

Orange marmalade

1 pear

– PREPARATION:

Mix the ingredients together (first the dry ones, then the oil, the Amaretto and the water) and leave to rest for about half an hour.

With the help of a pastry cutter, arrange the biscuits on a dripping pan lined with wax paper.

Cook for 25 minutes at 180°C.

Allow to cool.

Cut the peaches into slices.

Place some slices of peach and a teaspoon of orange marmalade on a biscuit.

Make up each dessert by placing another biscuit on top of the first, then yet another to complete the dish.
