THE WINNER RAFFAELLA FENOGLIO RECIPE 2: WHOLEMEAL “PICCAGGE” WITH CHERRY TOMATO SAUCE

Here is the winner of RECOMED Food Blogger Contest “A menu for the Mediterranean Diet” II edition: Ms Raffaella Fenoglio from Isolabona (ITALY), her Mediterranean Diet menu foresees the following 3 food recipes:

1) Avocado, Sheep Ricotta, Celery And Apple Appetizer

2) Wholemeal “Piccagge” With Cherry Tomato Sauce

3) Cocoanut and Pear Biscuits

According to the Contest Regulations Recipes, each food blogger should have proposed a menu made by 3 recipes to reinterpret in an original manner to create a “Mediterranean style” convivial meal:

FIRST RECIPE: Appetizer or first course including vegetables among ingredients;

SECOND RECIPE: second or main course;

THIRD RECIPE: dessert based on fruit.

Recipes needed to:

-be inspired from the principles and values belonging to the Mediterranean Diet, recognized Unesco Intangible Cultural Heritage on November 16, 2010

– realized with the ingredients composing the Mediterranean diet food pyramid created by Ancel Keys

– containing extra virgin olive oil coming from at least one of RECOMED countries.

Here is the winnwe RAFFAELLA FENOGLIO recipe 2:

WHOLEMEAL “PICCAGGE” WITH CHERRY TOMATO SAUCE

– INGREDIENTS:

200 gr wholemeal flour

80 ml water

20 ml extra-virgin olive oil

Cherry-tomato sauce

– PREPARATION:

Mix the flour with the water, the extra-virgin olive oil and the salt, forming a ball of dough.

Cover it with transparent cling film and allow to rest for half an hour.

Roll out the dough, not making it very thin, and cut it into strips a couple of centimetres wide.

Cook them in salted boiling water for a few minutes, drain and garnish with the tomato sauce.
