THE WINNER Raffaella Fenoglio’s RECIPE1:

AVOCADO, SHEEP RICOTTA, CELERY AND APPLE APPETIZER

– INGREDIENTS for four glasses:

100 g sheep ricotta cheese

1 ripe avocado

1 crunchy apple (e.g. a Pink Lady, a Stark, etc. 1 celery stalk)

1 lemon

For the sauce:

extra-virgin olive oil

salt

– PREPARATION:

Peel the avocado and cut it into chunks. Do the same with the apple, then wet them both with the lemon juice.

Wash the celery stalk and cut it very finely into pieces. Mix them with the avocado and apple.

Season with the salt and extra-virgin olive oil.

Mix the ricotta cheese with a little oil (no salt at all, please), distributing it between the four small glasses, leaving it at the bottom.

(Strike the bottoms of the glasses gently against a tea-towel to settle the ricotta.)

Pour the avocado, apple and celery fruit salad onto the ricotta. Decorate with a small slice of celery.

Leave in the refrigerator for about one hour before serving.
